Foodie Friday: Hello Fresh’s Undercover Ratatouille with Lemon Roasted Sea Bream

C: Hi guys! Happy Foodie Friday! Today I am going to share with you another Hello Fresh recipe which I really enjoyed making (and eating). If you have not heard of Hello Fresh then make sure you check out our previous posts here and here, where we explain what they do and introduce you all to some of the other recipes we received!

I don’t think I did too badly really! All the ingredients were super fresh and lovely, and the cards make it simple to re-create a professional looking meal. I had to add in roasted new potatoes, as the boyfriend doesn’t seem to think a meal without carbs is an acceptable one. To be honest, I did think they were needed/maybe we both eat too much!

Overall the food was lovely and easy to do – it only took 30 minutes to create a healthy and different meal to what we would normally eat. Perfect for week days when you don’t have a lot of time to cook after finishing work.

Foodie Friday: OK Diner

C: my friend Kitty took me to OK Diner a few weeks ago, I had never been before and it was amazing! Apparently it is weird that I have never been, so I thought I had better share the American Diner experience with you lovely readers.

As we were in an American style diner, we thought we had better go all out (for the sake of research) and get milkshakes. I got a cookies and cream shake, and it was possibly the best thing I have ever tasted. It was super thick and the metal cups are also full of milkshake so you basically get two glasses! It was so good I had basically finished it before my meal came (not that they were ages… I am just greedy) and I was full! Don’t worry, I still managed to fit in almost all of my burger though!

I went for the 6oz Royale Burger, which is topped with BBQ pulled pork and Jack cheese. Obviously a winning combination. It also came with curly fries and a tomato relish.

Kitty went for the OK Beanburger, topped with veggie chilli and cheese with a side of curly fries. It was super messy to eat so I wouldn’t recommend it if you are on a date and wish to look attractive in any way!

We both really enjoyed our burgers and the whole OK Diner experience – I was a bit too excitable. It was exactly as I expected, the food was good, the service was great and although the waiters were not on roller skates (disappointment) it was definitely the best girly date we have been on in ages – even if I did think I was going to be sick on the way home due to over indulgence.

Foodie Friday: Hello Fresh’s Mexican “Dirty Rice” with Chicken and Chorizo

C: We posted last week about our Hello Fresh boxes that we recently received (you can see the post here) and I have been testing out some of the amazing recipes they sent me!

As you can see I did a pretty good job! The recipe card was super easy to follow, meaning I got a professional looking meal that was easy and quick to make. It was super tasty, I’m not normally a big fan of rice so I wasn’t sure I would enjoy this.

The herbs and spices provided made this so yummy that the boyfriend ate 3 bowls full – a clear sign that tea was a success! I really enjoyed making (and eating) this, so the recipe card has been kept so I can do it again!

I loved my first Hello Fresh experience as it means you can try something you wouldn’t normally make, and although a little pricey you get to keep the recipes to do again! Perfect! Foodie Friday: Hello Fresh!

A & C: Welcome to another Foodie Friday! This week we’ve decided to share a new discovery with you; an amazing company called Hello Fresh. We both received vouchers for Hello Fresh in our You Beauty Discovery boxes last month and they were for a whopping £25 – which is super generous! We hadn’t actually heard of the company before, and just in case you haven’t either here’s a bit of a back story.

Hello Fresh was set up by Patrick, who had a dream of changing the way the nation eats. He spends time prepping new recipes each week, sources the best ingredients and puts them together for his customers – who can hop onto the website, order a box of their choice and have it delivered straight to their door. No stressful shopping queues, no time wasted and easy recipes to follow with literally everything you need. There are three boxes to choose from; the Classic box, the Veggie box and the Family box. In each box, you get a choice of how many meals you need; 3 meals per week for 2 persons, 3 meals per week for 4 persons or 5 meals per week for 2 persons. The starting price for these boxes is £42, which works out to be £7 per person per meal. A bargain for such yummy food delivered direct to your door.

Because our vouchers were for £25, this meant that we got all of this for just £17 – ah-mazing! We’ve decided to break this down into a few posts, because there’s just too much info and photos for one, so in today’s post we will show you what we received in our boxes with a run down of each recipe, and over the next few weeks we will show you the delicious food we made and let you know how successful the recipes were. We both cook every day, and love cooking – but it can become a chore so these boxes are such a treat for us – they really take the stress out of meal-times, planning your food, shopping for food, working out how to cook it, checking you have the ingredients etc. So here’s what we received!

The boxes are absolutely jam packed with goodies. I couldn’t quite believe the amount of food that amount been delivered to be honest, and it even came with it’s own cooler bag which is super re-usable (my boyfriend has been taking his pack-up to work in it!). The cooler bag had the meat; chicken, beef and salmon in it, as well as other ingredients that needed to be kept cool. I even got little sachets of tomato ketchup and mustard, as well as a sachet of peppermint tea leaves – so cute!

C: I ordered my box a week after Annie, so I received different recipes to try.

First up… look how full of food the boxes are! I love anything in miniature (I have a problem) so I loved the little mini pots of herbs etc – the boyfriend isn’t so happy as I have kept them for when I will obviously need them again. Foodie Friday: Macmillan Coffee Morning

A: For this week’s Foodie Friday (check out last week’s here, especially if you like burgers!), I thought I’d share with you some of my favourite cake recipes. We held a Macmillan Coffee Morning where I work last week so I got my bake on and got some photos for you too, because everyone loves cake!

I baked a selection of three cakes; a Lemon Drizzle, Mars Bar Cakes and Rocky Road Cupcakes.

Lemon Drizzle

I won’t take you through everything for this because I actually wrote about it on the blog a few month’s ago – click here to see it!

Mars Bar Cake

What you need:

  • 3 x large Mars Bars
  • 300 grams Rice Krispies
  • 300 grams of butter
  • 1 large tablespoon of golden syrup
  • 2 x 200 gram bars of milk chocolate
  • a greased baking dish – about 30cm x 25cm

(by the way, this can be expensive to make – especially if you double the batch, so I always get my ingredients from Aldi. Their ‘Titan’ bars are the same as Mars Bars and their milk chocolate is really good too – and it’s always so much cheaper!)

Firstly, you need to melt the butter, golden syrup and mars bars in a saucepan. The nougat in the mars bars doesn’t melt completely and just goes gloopy – this is when you remove the pan off the heat and add the Rice Krispies, a little at a time. Once the mixture is combined, spoon it into the greased baking dish and pat it down firmly with the back of a spoon. Leave to cool, and pop in the fridge once it’s lost most of it’s heat.

Next, melt the chocolate in a bain-marie. Once it’s all melted, pour over the Rice Krispie base and leave to cool.

When it’s cool, cut it into squares and eat it! It’s really moreish, so try not to eat it all…this is why I normally have to double the batch, so there’s some left for other people!

Rocky Road Cupcakes

What you need:

  • 3/4 cups plain flour
  • 1/4 cup cocoa powder
  • 1/2 cup caster sugar
  • 2 tsp baking powder
  • 1/2 tsp vanilla essence
  • 80 grams butter
  • 2 eggs
  • 1/2 cup milk

Start by preheating the oven to 160°c and adding your cake cases to a 12 hole mini muffin tray.

Sift all of your dry ingredients into a mixing bowl and make a small well in the middle of the bowl, then add the rest of the ingredients – the vanilla essence, the butter, the eggs and the milk.

Mix these together, either by hand or with an electric mixer until just combined. Then add the mixture to the cake cases. I always add two tablespoons to each case.

Place the tray into oven for 10 – 15 minutes (or until they start smelling really good). Once they are cooked through, let them cool before adding the topping.

I haven’t included ingredients for the topping because you can literally use whatever you want. I personally don’t like nuts or raisins, so when I make a rocky road I use cherries, marshmallows and crushed digestives, which is exactly what I used for this.

I melted 1 200 gram bar of milk chocolate in a bain-marie and the chopped the cherries and broke the biscuits up. I then took the chocolate off the heat and added the cherries, biscuits and marshmallows to it and spooned (heaped – we like a lot rocky road in my house), onto the top of the cooled cakes.  Set them aside to cool (if you can) and then enjoy!
